Its called mammalian dive reflex. All sea mammals have it in a big way. Humans have it, thats how free divers can dive hundreds of feet down and hold their breath for ages. I would be very curious as to how the dog figured out that it could dive like that. The reflex kicks in automatically when water hits the face. You hold your breath, heart rate and circulation slow, etc. Its why if you black out while diving, you don't breathe in automatically. Free divers who die usually have no water in their lungs. By default, the body keeps the breath held under water. Must have been some kind of happy accident on the dogs part and he just kept doing it.

My Chocolate Lab I had when I was a kid did that. Every time my father and I would go fishing he would jump in and swim to the bottom or under the boat. I would flip shit every time he did it.
